You can borrow as many as you like. You may have to ask youir butcher about this. If you want to feed more people you would need more pork. These are the gridalles. Put the meat in a large and deep frying pan cover with water and boil two minutes pour off the water and begin to fry the meat on low heat you will have to turn it often and turn the heat higher as you go along be careful not to get burned and turn up the fans this meat will splatter a lot and cause some smoke fry until the grillades are golden brown and remove from the fat very carefully.
Place on a plate on a piece of paper towel to absorb the fat. Turn the heat down on your frying pan to low and add two finely sliced onions cook until they are clear then when you serve your fish just put some onion and fat on it and grillades on the side. I am looking for an old recipe used in Gaspe. It was a type of grillade used on top of boiled Cod fish. I think it was mixed with onions as well.

I remember as a child Rev. Grover Kendrick, his wife and mother-in-law visiting with us in NL 's. I know they lived in the Gaspe area. His wife and mother-in-law were relatives of my father.
I don't know if they had any children, can't remember any visiting with them. I'd really llike to get a picture if you know where. Mother would be so happy to see it. She never lost her love of the Gaspe. She just asked today if I would take her there one more time. She still is Nurse Jean, and tries as she can to help the "patients" she lives with in assisted living.
She regularly chides the doctors for not examining persons who have symptoms she thinks should be seen to. And the nurses catch H if their nursing technique is inadequate. That must have been some great training she got in Cambellton to still be practicing 70 years later.

Cyndi by Cyndi Girouard Sunday July 31 On Aug 3 at 7 pm, myself and some friends will be giving a presentation on the fiddle music of several fiddlers from around Douglastown, notably Erskine Morris.
Anyone with memories of the old time music and step dance is welcome to come and share their stories, or even a song, or tune. On Aug 4 and 5th, I'll be giving beginner and intermediate fiddle workshops.
If you've always wanted to learn the fiddle, I'll get you started with holding the instrument and bow and playing a few simple tunes by the end of the class.
For the intermediate class, I'll introduce you to some fairly straightforward tunes and techniques once very popular among fiddlers on the coast. The cost is by donation. If you don't own a fiddle, contact the Community Centre at and they will provide you with one.
